Grilled Peaches with Mascarpone

Fresh fruit is delicious but pop it on the BBQ and watch it transform into a sweet, tasty treat that’s guilt-free!


Serves 4

4 peaches, halved & stones removed
5 sprigs of fresh thyme, leaves picked
2 tbs of honey

250g of mascarpone
1 tbs of icing sugar
1 tsp of vanilla paste

4 slices of brioche, toasted at time of serving


  1. Peaches –Oil & preheat your Ziegler & Brown BBQ,
  2. When smoking hot, place the peaches on the grill, flat side down first
  3. Grill for 5mins, turn over & repeat
  4. You will see lovely grill marks on the peaches
  5. Mascarpone – combine the ingredients in a small bowl & mix well
  6. Toast brioche on the hot grill also until toasted to your desire
  7. Spread the vanilla mascarpone over the brioche, top with grilled peach halves, drizzle with a little honey & fresh thyme – serve immediately
